In order to meet the food demand of the ever-increasing population, agriculture should be commercialized by using modernized technologies, and should also be given importance to agro-based industries for better survival. In addition to the cultivation of field crops, cereals, and spices, the cultivation of fruits, vegetables, flowers, spices, aromatic, and medicinal plants is increasing, and India now ranks second in the world in vegetable production. To avoid the post-harvest losses during harvest, handling, and transport, processing food value addition assumes great importance, which will provide nutritious food and also generate employment and power.
